Zucchini Pizza

Ingredients needed: Large zucchini, corn oil, diced tomatoes (or sauce), flour, basil, oregano, salt, sugar, mozzarella cheese, Parmesan cheese, black-strap molasses and egg.

Pour about a half inch of corn oil in a frying pan and turn the heat on high until the oil is hot. Once the oil is hot (the oil should sizzle when you place the zs in it) turn the temperature down to about 5. Also pre-heat the oven to 350 degrees.

Use two shallow bowls, in one beat two eggs and in the other place 3 or 4 tablespoons of flour.

Slice the zucchini as thin as possible and cut the green skin off the outer edge. Dip the zucchini slice (zs) in the beaten egg and then in the flour. Make sure the zucchini slices are coated on both sides with the egg and the flour and place the coated slice in the hot oil. My frying pan will hold 3 slices at a time. When the one side is golden brown turn it over. When that side is golden remove the slice from the oil and place it on a paper towel to drain and cool.

Place the fried zucchini slice on a baking sheet ( I cover my baking sheet with aluminum foil, dull side against the food). Now I sprinkle a little salt and sugar on the zs, diced tomatoes ( I like the Rotel, original, with jalapeno peppers, smashed with a fork), after the diced tomatoes or the sauce is ready to be used add some black-strap molasses to it, sprinkle oregano and basil on the zs, mozzarella cheese and on top some Parmesan cheese.

I place the pan in a pre-heated oven at 350 degrees and bake for 10 to 15 minutes or until the cheese is melted. I turn the broiler on for about 5 to 10 minutes or until the top is browned.

The Zucchini Pizza may be removed from the oven , let cool for a few minutes and then enjoy. I think you will find even the pickiest eaters will enjoy this dish.

Popcorn Okra

Needed: Corn oil, okra, corn meal/flour mixture, salt, sugar, and mixing bag.

I usually use the already sliced frozen okra. I use 1 cup sliced okra per serving.

1 cup of the frozen okra from the bag, place it in a large bowl and let it thaw at room temperature. If you are in a hurry you may place the frozen okra in the oven or in the microwave to thaw.

While the okra is thawing take a one gallon zip lock bag and put 2 or 3 tablespoons of flour in it along with 1 teaspoon of salt and one teaspoon of sugar.

Use a deep kettle and pour about ½ to ¾ inch of corn oil in it. Turn the burner on high to heat the oil.

Make sure the okra is thawed and add the okra to the contents in the zip lock bag. Gently shake the bag until all the okra is covered or coated. Pour the contents of the bag onto a plate.

Take one kernel of okra and place it in the oil. If the oil is hot it will fizzle. Once the oil is hot enough put all the okra in the oil and turn the heat back to about 5.

Let the okra sizzle in the hot oil for 3 or 4 minutes until the okra is light brown all over. Remove the okra from the oil and place it on a paper towel to drain and cool.

Serve and enjoy! Great for your evening meal.
